Buttercream recipe: how to make buttercream in different ways

Known for being a light, velvety, and extremely tasty icing on cakes and cupcakes, the famous buttercream. Widely used to decorate, fill, and level different types of sweets! It is usually made with just 3 ingredients: butter, sugar, and vanilla essence. But for you to choose your favorite type, we have separated 3 different buttercream recipes. Swiss meringue buttercream

With a slightly denser texture than most types of buttercream, Swiss meringue buttercream is the perfect recipe for party cake toppings and holidays. Its main advantage and texture are the smooth and delicate flavor of the meringue, which combines with practically all the flavors of cake fillings.

You will need:

1/2 cup of egg white at room temperature, 3/4 cup of powdered or refined sugar, 340 g of unsalted butter, and between 1/2 and 1 tablespoon of vanilla essence.

Start by mixing the whites and sugar in a glass or metal container. Then heat the mixture in a double boiler until the sugar is completely dissolved and a white foam begins to form.

Take to beat a mixer at full speed for about 8 minutes (or until the meringue is very firm and shiny). Then, add the cubes of butter gradually, beating once again at full speed and, when homogeneous, flavor your topping. Just add the vanilla essence and beat briefly. To handle, use a spatula or icing nozzle!

Note: To prepare to vary the cream’s flavor and prepare, for example, a chocolate buttercream, just replace the vanilla essence with powdered chocolate.

American buttercream

American buttercream is a little drier and more granular than other buttercream variations. However, to transform your texture, all you need to do is add a small amount of milk to the recipe. Take a look at the ingredients!

You will need:

170 g of butter at room temperature, 360 g of powdered icing sugar (ie, icing sugar with cornstarch), 2 tablespoons of milk, and 2 teaspoons of vanilla essence.

To avoid the risk of making a very granulated cream, start beating the butter at medium speed for 3 to 5 minutes in an electric mixer. Then, sift 1/3 of the sugar and beat again with the butter at low speed, increasing to medium-high speed after 1 minute. At this stage, you must repeat the process until the sugar is gone. When the mixture is homogeneous, add the milk and beat for another 5 minutes. Finish by adding the vanilla essence and blend briefly to incorporate the flavor.

Tip:  You can also add a few drops of food coloring in this last step to make the buttercream colored!

Buttercream with sour cream

Slightly less popular than the other two types, the buttercream with the sour cream recipe. But contrary to what some people may think, it is as tasty as others and has even more creaminess!

You will need:

100 g of butter, 1 box of sour cream, 2 cups and 1/3 of refined or sifted icing sugar , 1 teaspoon of vanilla essence, and 100 ml of milk.

Start by beating the butter for 3 minutes in an electric mixer at medium speed. Add the sugar gradually, beat for 2 minutes, and repeat this process until the ingredients are completely added. Add the cream and beat for another 5 minutes. At the end of the recipe, incorporate the vanilla essence, and blend briefly for a few seconds.
